How to Make it:Use 1- to 1-1/2-inch cookie cutters to cut shapes out of cantaloupe and honeydew slices and cheese. Thread fruit and cheese onto 4 small skewers. Place in a flat storage container and chill until serving time (or up to 24 hours). (P) Snack MixIngredients
How to make it 1. Pop popcorn according to package directions. Pour popcorn into a very large bowl; coat lightly with cooking spray. 2. Sprinkle popcorn with Parmesan cheese; toss gently to coat. Stir in potato sticks, peanuts, and dried fruit. (P) |
Confetti Yogurt PopsIngredients
How to Make it: In a large bowl gently stir together the yogurt and fruit. Spoon into 4-ounce ice-pop molds or 3-ounce paper cups. Cover molds or cups with foil; use a sharp knife to cut a small hole in the foil and insert cut side of pretzel rod or snack stick. Freeze until firm. How to Make It: 1. For dip, in a small mixing bowl beat cream cheese with an electric mixer on medium speed until smooth. Beat in peanut butter, milk, and honey until well combined and smooth. If desired, chill before serving. 2. To serve, spread dip in celery sticks and garnish with animal crackers and cut-up fresh fruit. Or, serve with assorted dippers. Makes twenty 1-tablespoon servings (1-1/4 cups). (P) |

Cucumber-Melon "Sushi"
How to Make it: Cut cantaloupe into 16 cubes, about 1 inch each. Use a vegetable peeler to slice 16 long strips of cucumber. Wrap strips around melon cubes and insert a toothpick. Stir together 6 ounces plain yogurt, 2 tablespoons orange-juice concentrate, and a teaspoon of chopped cilantro for a dipping sauce.

How to Make It: 1. Place the first four ingredients in a medium saucepan. Cook over medium heat for 10 minutes. Remove from heat and allow to cool for 10 minutes. Smash with a potato masher. 2. Spoon into serving bowls and sprinkle with ground cinnamon. Makes 6 servings.(P) |
